Bees knees cocktail (serves 1)

50 mL
M&S Distilled London dry gin
or distilled low alcohol lemon and rosemary botanical
25 mL
lemon juice
12 mL
honey syrup

peel only, for garnish

Apple crisps topped with blue cheese (serves 2)

M&S British Scarlett Paradise apple
finely sliced on a mandolin, or as thinly as you can with a knife
50 g
lighter creamy soft cheese
50 g
blue stilton , crumbled
15 g
toasted walnuts , crumbled

Blue cheese stuffed fried olives (serves 8)

2 packs
(170 g)
M&S Greek olives with garlic, pimento and jalapeño
150 g
panko breadcrumbs
50 g
plain flour
as needed
Italian herb seasoning

40 g
blue stilton , crumbled

Method

Step 1
Grab a cocktail shaker and fill with ice. Add your gin (50 mL) , lemon juice (25 mL) and honey syrup (12 mL) . Shake until well-chilled.
Step 2
Double strain into a cocktail glass. Garnish with a twist of lemon (1) and a sprig of rosemary (1 sprig) .
Step 3
Pre-heat the air fryer to 180°C if required.
Step 4
Thinly slice your apples (1) or (carefully!) use a mandolin. Layer apple slices in a single layer in the air fryer basket.
Step 5
Cook for 8-10 minutes, turning and flattening them once or twice during cooking. Once done, remove and repeat with the remaining apple.
Step 6
Meanwhile, make your blue cheese topping. Combine the stilton (50 g) and cream cheese (50 g) .
Step 7
When everything’s cooked, top your apple slices with a small amount of the blue cheese mixture and finish with a little crumble of walnuts (15 g) .
Step 8
Pre-heat your air fryer to 200°C if required.
Step 9
Grab three bowls. Crack and whisk the eggs (2) into one, mix the flour (50 g) and Italian seasoning (as needed) together in the second, add the panko breadcrumbs (150 g) to the third.
Step 10
Stuff a bit of stilton (40 g) into each olive (2 packs) . Coat them in flour, then the egg mixture, then the breadcrumbs. Once coated, add the olives onto a plate in a single layer.
Step 11
Once they’re all done, spray them with olive oil spray.
Step 12
Place them into the air fryer basket. Arrange in a single layer with a little space between each olive.
Step 13
Air fry for five minutes. Turn them over and spray again with olive oil spray. Air fry for another three minutes. Place on a plate or in a bowl and enjoy.
