Flavour-packed dinners in a flash


In need of a super-easy, super-speedy weeknight meal? Look no further than our quick-fire dinners – they all contain six ingredients or less, and are so easy to make that you almost don’t need a recipe! Scroll down to see the ideas.
 

Harissa chicken with lentils

Coat chicken thighs, onions and carrots with half of a jar of M&S rose harissa paste. Add chopped tomatoes and bake for 30 minutes until the chicken is cooked and the vegetables are soft. Add lentils for the last 5 minutes of cooking time, then serve.

Green Thai traybake

Coat haddock fillets, baby corn and cherry tomatoes in an M&S green Thai curry paste shot and bake for 25-30 minutes. Cook the rice in the microwave according to the pack instructions and serve alongside.

Lemon, artichoke and roasted chicken orzo 

Add chicken thighs, orzo, stock, lemon and Collection Italian baby artichokes to a roasting tray. Roast for 25 minutes, making sure the chicken is cooked all the way through and the orzo is soft. Top with parsley before serving.

Teriyaki stir-fry

Stir-fry some prawns, then add some peppers and baby corn. Add some M&S deiciously versatile teriyaki sauce towards the end of the cooking time. Cook the microwave rice according to the pack instructions, and serve with the stir-fry. . 

Smoky vegan ’nduja chickpea ragu with grains

Fry some onions and pepper. Add some chickpeas, some M&S classic tomato everything sauce and a dessert spoon of Plant Kitchen vegan ’nduja paste, and heat through. Cook a pouch of M&S bulgur wheat, white quinoa, freekah and red rice, and serve with the ragu. Finish with an extra dollop of the vegan ’nduja paste for added heat.

Chicken tikka filo pie

Add a tin of M&S chicken tikka masala to a pie dish, top with crumpled filo pastry and wash with butter or egg. Top with nigella seeds and cook in the oven until the filo is golden-brown. Serve with microwaved M&S buttery mashed potato, rice or naan.

Plant Kitchen perfect burgers

Cook the Plant Kitchen burgers according to the pack instructions. Layer in the the buns along with the Plant Kitchen cheddar, sliced tomatoes, crunchy salad and Plant Kitchen special burger sauce.

Topped chicken tikka naans

Fry some chicken breast in a generous portion of M&S tikka paste. Serve the chicken on top of warmed naan breads. Drizzle over some yogurt and scatter over some coriander and M&S pickled red onions to serve.

Beef koftas

Season and shape beef mince into koftas and cook in a pan. Grill some flame-baked rotis, then top with the koftas and some tzatziki, parsley, sliced onion and pomegranate seeds.

Chicken, leek and bacon pie

Pan-fry some bacon lardons and sliced leeks, transfer to a pie dish and mix in a tin of M&S chunky chicken in white sauce. Top with ready-rolled puff pastry (wash with milk or egg) and bake. Serve with M&S buttery mashed potato, microwaved according to the pack instructions.

Chicken nasi goreng

Fry some sliced chicken for 3-4 minutes, then tip in some chopped red pepper and green beans and stir-fry for 2-3 more minutes. Add some M&S nasi goreng paste and bring to a simmer before adding the rice and spring onion, then continue to stir-fry for a further 3 minutes. Ensure the chicken is thoroughly cooked before serving.

Gunpowder chicken and potato traybake

Put chicken thighs, new potatoes, red peppers, red onion into a roasting tray and mix in some M&S Kashmiri chilli gunpowder paste, making sure everything is coated. Bake in the oven for 30 minutes. Ensure the chicken is fully cooked, then top with yogurt to serve.

Chickpea and potato curry

Fry some M&S tikka paste, then add some chopped tomatoes, new potatoes, chickpeas and coconut cream. Cook until the potatoes are soft, then add the spinach. Top with a drizzle of coconut cream to serve, along with some fresh coriander, if you like.

One-pot tomato and cannellini bean orzo

Fry some onion, then add to a roasting tray along with vegetable stock, M&S classic tomato everything sauce and orzo. Bake in the oven for 15 minutes. Towards the end of the cooking time, add in the cannellini beans. Finish with a squeeze of lemon.

Vegetable pesto pasta

Cook some pasta and Tenderstem® broccoli, then add cherry tomatoes and chopped red and yellow peppers and stir through some pesto. Serve topped with crumbled feta.

Pitta bread pizzas

Top pitta breads with mozzarella, M&S caramelised red onion chutney and sundried tomatoes, then bake in the oven for 15 minutes. Add the basil towards the end of the cooking time, or as a garnish once cooked.
