Step 1
Mix the grated Cornish Cove medium cheddar (100 g) with the grated Cornish Cruncher™ cheddar (100 g) .
Step 2
Cut 8 slices of bread (1 loaf) from the middle of the loaf and organise into 4 sandwiches.
Step 3
Butter (50 g) each slice of bread on 1 side. Flip over 4 slices and spread 2 heaped tsp chutney (55 g) on to each.
Step 4
Generously top the chutney with the cheese mix then close the sandwiches, making sure the butter is on the outside.
Step 5
In a large frying pan, toast the sandwiches until the buttered exteriors crisp up and turn golden. Turn the sandwiches over and cook on the other side until golden and the cheese has melted. If you don’t have a pan big enough to fit all the sandwiches at once, cook in batches and place on a baking tray once cooked.
Step 6
Serve the toasties with coleslaw or watercress (1 bag) and a dollop of extra chutney.
