Method

HIDE IMAGES
Step 1
Using a biscuit cutter, press down into the centre of two of the bread slices to cut out a ring of bread, creating a hole in each one (keep the rings to dip into your egg later).
Step 2
Heat a splash of oil in a pan over a medium-low heat and place the bread slices (4 slices) into the pan. Crack an egg (2) into each of the holes, cover the pan with a lid and fry until the eggs are cooked through and the bread golden on the underside.
Step 3
Meanwhile, grill the bacon (1 pack) until crisp.
Step 4
Remove the whole slices of sourdough from the pan and place onto plates. Smear the slices with butter (5 g) and tomato sauce (to taste) , then layer with three rashers of bacon and a few sprigs of watercress (1 handful) each. Top with the egg-filled bread slices to serve.
