white onions , finely sliced

red chillies , chopped

root ginger , chopped

garlic , chopped

roughly diced into 1 cm pieces

cauliflower
cut into small florets

coriander , chopped

lemon , juiced

Method

Step 1
Heat the vegetable oil (15 mL) in a large saucepan over a medium-high heat. Add the white onions (2) , season generously with salt and fry for 5 minutes, until golden. Add the red chillies (15 g) , root ginger (15 g) and garlic (15 g) and fry for a couple of minutes.
Step 2
Add the garam masala (15 g) , stir well and cook for 30 seconds, then add the tomatoes (4) , stir and cook for 2 minutes.
Step 3
Add the M&S new potatoes (500 g) and 300ml of just-boiled water to the pan, bring to the boil, cover with a lid and cook over a fairly high heat for 10 minutes, stirring now and again.
Step 4
Add the florets of cauliflower (1) and cook for a further 10 minutes, or until the potatoes and cauliflower are tender.
Step 5
Stir in the coriander (25 g) and lemon (1/2) . Check the seasoning – you may want to add more salt or a touch of garam masala.
Step 6
Serve with your favourite Indian sides and a dollop of mango chutney (as needed) for dipping.
