M&S 3-year-old Cornish Cruncher vintage cheddar , grated
plus extra for topping and serving

1 grated and 1 thinly sliced
to taste
thyme
a few sprigs, leaves removed and picked

milk

M&S classic ploughman's chutney

Method

HIDE IMAGES
Step 1
Preheat the oven to 220ºC/200 ºC fan/gas mark 7 and grease a baking sheet.
Step 2
Sift the flour (200 g) into a large mixing bowl then stir in the salt (3 g) and baking powder (4 g) .
Step 3
Grate in the butter (50 g) and then rub into the flour until the mix resembles fine breadcrumbs. Mix in the cheddar (50 g) , grated apple (1) and thyme (to taste) .
Step 4
In a jug, beat together 1 egg (1) and the milk (75 mL) . Create a well in the flour mix and then pour the egg mix into the centre of the bowl. Slowly bring the mixture together using your hands.
Step 5
Lightly knead the scone mixture on a floured surface before patting it out so it’s around 2cm thick. Cut the scones using a 5cm pastry cutter. Place on the greased baking sheet.
Step 6
In a jug, beat the other egg (1) then brush the scones with it. Top with an apple slice (1) and some grated cheese. Bake in the oven for around 10 minutes, until well risen and golden.
Step 7
Allow to cool slightly on a wire rack and serve with butter, some slices of Cornish Cruncher and apple, and a generous dollop of ploughman’s chutney (to taste) .
