chopped into chunks, no need to peel

M&S grains and greens mix

M&S marinated flame seared red and yellow peppers , finely chopped

avocado

lime , juiced
1 handful
radishes , thinly sliced
1 handful
pea shoots
1 handful
M&S toasted sunflower and pumpkin seeds
1 handful
pomegranate seeds
to taste
fresh soft herbs
such as parsley, dill, mint, or basil, to garnish
(optional)

For the dressing

10 g
M&S rose harissa paste
30 mL
olive oil
22 mL
M&S apple cider vinegar
7 g
M&S pure honey
to taste
lemon juice

Method

Step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. Arrange the M&S sweet potato jackets (2) on a baking tray in one layer and roast for 20-25 minutes, until soft.
Step 2
Cook the grains and greens (1 pack) according to the pack instructions before stirring through the roasted peppers (75 g) . Pan-fry the veggie balls (1 pack) according to the pack instructions.
Step 3
Whisk together the harissa (10 g) , olive oil (30 mL) , vinegar (22 mL) , honey (7 g) and lemon juice (to taste) and set aside.
Step 4
Slice the avocado (1) , season with salt and squeeze over the lime (1/2) .
Step 5
To assemble, spoon the grains into shallow bowls, then top with the sweet potatoes and veggie balls. Add the avocado, radishes (1 handful) and pea shoots (1 handful) . Spoon over the dressing. Scatter over the pumpkin and sunflower seeds (1 handful) , pomegranate seeds (1 handful) and fresh herbs (to taste) , if using.
