2 g
garlic granules
as needed
chilli flakes
1 handful
parsley , chopped
to serve

lime
cut into four wedges, to serve

Method

Step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. Line a baking sheet with parchment.
Step 2
Using a sharp knife, cut each corn on the cob (4) lengthwise, then each half into three lengthwise again.
Step 3
Put the smoked paprika (2 g) , cumin (2 g) , oregano (2 g) , garlic granules (2 g) and chilli flakes (as needed) into a bowl along with 3 tbsp olive oil. Coat the corn in the spice mix, and then place onto the lined baking sheet.
Step 4
Bake for 30 minutes, until curled and crispy. Top with the chopped parsley (1 handful) and serve with the lime wedges (1) and chipotle mayo (to taste) .
