Method

HIDE IMAGES
Step 1
Heat a splash of oil in a non-stick frying pan over a medium heat.
Step 2
Fry the trout (4) for around 2 minutes on each side until golden.
Step 3
Add the butter (60 g) to the pan. Once it begins to foam, add the juice of half the lemon (1) , then use a spoon to baste the trout in the lemon butter, then turn off the heat.
Step 4
Toss the salad leaves (2) with the pesto and parmesan shavings, then divide between 4 bowls.
Step 5
Serve the trout with a drizzle of the lemon butter on top of the salad and serve with the remining lemon cut into wedges.
