Method

Step 1
Preheat the oven to 180°C/160°C fan/gas mark 4. Parboil the sweet potato chunks (2) for 10 minutes, until slightly softened. Add to a baking dish with the garlic (4 cloves) , drizzle with olive oil and sprinkle with most of the cajun seasoning (15 g) . Roast for 25 minutes.
Step 2
Meanwhile, heat a drizzle of olive oil in a saucepan over a medium heat and fry the onion (1) with a little more cajun seasoning until soft. Add the tomatoes (1 tin) and cook for 15 minutes.
Step 3
Crumble the chorizo puppies (4) into a frying pan and cook until crispy.
Step 4
Remove the sweet potatoes from the oven and squeeze the garlic cloves from their skins. Stir the garlic into the mayo (60 g) , along with the lemon juice (1/2) . Serve the potatoes topped with the tomato sauce, vegan chorizo, mayo and chopped parsley (1 handful) .
