medium M&S sweet potato jackets

M&S lemon-infused olive oil

For the salsa

medium tomatoes , diced

salad onion , finely sliced
1
jalapeño chilli , finely chopped
1
lime
juice only
1 handful
coriander , chopped

Method

Step 1
Preheat the oven to 180°C/160°C fan/gas mark.
Step 2
Place the M&S sweet potato jackets (4) into a baking tray and sprinkle with the smoked paprika (2 g) before drizzling over some oil. Bake for 20-25 minutes, until charred on the outside and tender in the middle.
Step 3
To make the salsa, combine the tomato (3) , salad onion (1) , jalapeño chilli (1) , lime juice (1) and coriander (1 handful) in a bowl. Season with salt and pepper and check the acidity levels, adding more lime if you like.
Step 4
Cook the Select Farms 3% fat beef burger (4) according to the pack instructions.
Step 5
Steam the broccoli (200 g) in a pan of salted boiling water for 2-3 minutes, until tender. Toss with the lemon-infused olive oil (5 mL) .
Step 6
To serve, put the burgers into the buns (4) with the salad (1 handful) and spoon over the salsa. Serve with the potato wedges and broccoli.
