Method

HIDE IMAGES
Step 1
Add the M&S berry mix frozen (150 g) , 3 tbsp caster sugar (35 g) and lemon (1) to a saucepan. Heat over a medium heat until the fruit has defrosted, softened and thickened. Set aside.
Step 2
In a large bowl, whisk together the M&S free-range mixed size eggs (2) , milk (100 mL) , the remaining caster sugar (20 g) , ground cinnamon (1 g) and vanilla extract (5 mL) until combined.
Step 3
Dip the M&S extremely caramely hot cross buns (4) in the egg mix, turning so all sides are coated.
Step 4
Heat the unsalted butter (15 g) in a large frying pan over a medium heat.
Step 5
Fry each hot cross bun half for 1-2 minutes on each side until golden.
Step 6
Serve the French toast with the compote, a dollop of M&S Collection authentic Greek yogurt with vanilla (60 g) and a generous drizzle of M&S salted caramel sauce (as needed) .
