For the chocolate cupcakes

bicarbonate of soda

For the buttercream topping

softened butter

condensed milk
as needed
green colouring gel

Method

HIDE IMAGES
Step 1
Preheat oven to 180°C / 160°C fan/gas mark 4 and prepare a cupcake tray with cases/liners.
Step 2
Sieve the cocoa powder (30 g) , sugar (150 g) , flour (100 g) , bicarbonate of soda (3 g) and salt (2 g) into a mixing bowl and whisk together.
Step 3
Combine the egg (1) , buttermilk (100 mL) and vegetable oil (100 g) in another bowl.
Step 4
Add the wet ingredients to the dry ingredients and mix until fully incorporated.
Step 5
Gradually add the hot water (90 mL) and mix until well combined.
Step 6
Fill the cupcake liners about halfway with batter and bake for 16-20 mins or until a toothpick comes out with moist crumbs.
Step 7
Remove and cool the cupcakes on a cooling rack.
Step 8
While the cupcakes are baking, gently heat the egg whites (3) and sugar (65 g) over a bain-marie / double boiler until the sugar is dissolved and the mixture reaches about 55-60°C.
Step 9
Remove the mixture from the heat and whisk at high speed until the meringue reaches stiff peaks.
Step 10
Gradually add in the softened butter (220 g) in small chunks and beat until smooth.
Step 11
Add the condensed milk (70 g) and green food colouring (as needed) , mix until fully combined.
Step 12
Decorate cooled cupcakes using grass piping tip.
Step 13
Adorn the finished cupcakes with Colin the Caterpillar sweets (1 pack) and chocolate biscuit crumbs (to taste) .
