8 rashers
Select Farms smoked back bacon rashers
sliced into 1cm strips
2 cloves
garlic , sliced
2
peppers , diced
as needed
chilli flakes
2 tins
(400 g)
M&S Italian chopped tomatoes
1 L
vegetable stock
500 g
penne pasta
1 pack
(200 g)
Tenderstem broccoli
cut into smaller pieces
to taste
grated parmesan
to serve
or cheddar

Method

HIDE IMAGES
Step 1
Add a splash of olive oil to a large, deep pan over a medium-high heat. When hot, add the bacon (8 rashers) and cook for 5 minutes, or until crispy. Using a slotted spoon, remove the bacon from the pan and set aside on a plate.
Step 2
Add the garlic (2 cloves) to the pan and stir for 1 minute. Throw in the diced pepper (2) and cook for 2 more minutes, then add the chilli flakes (as needed) and cook for a further minute.
Step 3
Stir in the tomatoes (2 tins) and stock (1 L) , put the lid on the pan and bring to a simmer. Fold in the pasta (500 g) and leave to simmer for 8 minutes with the lid on, stirring occasionally to stop the pasta from sticking to the bottom of the pan.
Step 4
Add the broccoli (1 pack) and cook for a further 5 minutes, or until the both the broccoli and pasta are tender. Season with salt and pepper.
Step 5
Spoon the pasta into bowls and sprinkle over the crispy bacon. If you like, finish with some grated cheddar or parmesan (to taste) .
