fish sauce

reduced-salt soy sauce

M&S hoisin sauce

For the garnish

coriander , roughly chopped
1 handful
beansprouts
1 handful
basil , roughly chopped

Method

Step 1
In a large saucepan, add the onion (1) and ginger pieces (5.1 cm) and cook over a medium heat for a few minutes, stirring occasionally.
Step 2
Add the stock (750 mL) , water (250 mL) , fish sauce (15 mL) , soy sauce (15 mL) , hoisin sauce (5 mL) , star anise (2) , cinnamon stick (1) and clove (4) to the pot, season and bring to the boil. Once boiling, reduce the heat and simmer for 30 minutes.
Step 3
While the broth is cooking, prepare the noodles (180 g) according to the packet instructions. Once ready, drain, rinse and set aside.
Step 4
Prepare your M&S spring onions (2) , red chilli (1) , coriander (1 handful) , beansprouts (1 handful) , basil (1 handful) , lime (1) , sriracha (to taste) and divide onto individual plates or into bowls.
Step 5
Five minutes before your broth is ready, remove the onion, ginger, clove and cinnamon stick and add in the turkey (200 g) to warm through.
Step 6
Divide the noodles between two bowls, ladle the broth on top and garnish as you like it.
