red chillies , finely chopped
to serve
1 bunch
coriander , chopped
to serve
35 g
sesame seeds
to serve
2 cloves
garlic , grated
2.5 cm
root ginger , grated
thumb-sized piece
25 g
soft light brown sugar

For the dressing

60 mL
Shaoxing rice wine
120 mL
soy sauce
120 mL
sesame oil
2
limes
juice only

Method

Step 1
Prepare the noodles (2 packs) according to the packet instructions, then rinse well under cold running water and set aside.
Step 2
Mix the Shaoxing rice wine (60 mL) , soy sauce (120 mL) , sesame oil (120 mL) , lime juice (2) , garlic (2 cloves) , root ginger (2.5 cm) and brown sugar (25 g) in a small bowl.
Step 3
Put the cooled noodles, mango (1) , cucumber (1/2) , pepper (1) and lettuce (1/2) into a bowl. Pour in the dressing and mix well.
Step 4
Divide between serving dishes and top each with the chillies (2) , coriander (1 bunch) and sesame seeds (35 g) .
