freshly squeezed blood oranges
and zest of 1 blood orange
500 g
Greek yogurt
45 mL
maple syrup
15 g
pistachios , chopped

Method

Step 1
In a bowl, mix together the blood orange juice (75 g) , two-thirds of the zest, the yogurt (500 g) and the maple syrup (45 mL) .
Step 2
Pour the mix into a freezer-safe dish and freeze for 3 hours, whisking every 40 minutes, until set.
Step 3
Remove the frozen yoghurt 30 minutes before serving to allow it to soften slightly.
Step 4
Scoop into bowls and top with the chopped pistachios (15 g) and the remaining blood orange zest.
