cut into 4 x 2.5-cm thick steaks

red peppers , deseeded, sliced
1 clove
garlic , sliced

balsamic vinegar
1 pinch
white sugar
1 pouch

cooked green lentils
1 handful
flat leaf parsley , chopped
to taste

Method

Step 1
Preheat the oven to 220°C/200°C fan/gas mark 7.
Step 2
Place a frying pan or griddle over a medium-high heat, add 1 tablespoon of vegetable oil (15 mL) followed by the cauliflower steaks (1 head) . Fry for 2-3 minutes on each side to caramelise. Transfer them to a lined baking tray, then dust with the steakhouse seasoning (7 g) , rubbing with more oil to help coat them. Roast in the preheated oven for 15 minutes.
Step 3
Using the same pan, add a dash more vegetable oil (30 mL) and the red pepper (2) and garlic (1 clove) and sweat them until softened. Add the paprika (2 g) , vinegar (45 mL) and sugar (1 pinch) . Stir in the lentils (1 pouch) to warm through. Season with salt (to taste) and pepper (to taste) , remove from the heat and add the parsley (1 handful) (reserving a little to garnish).
Step 4
Remove the roasted cauliflower steaks from the oven and arrange on four serving plates. Divide the warmed pepper and lentil salsa over the steaks and scatter with parsley to serve.
