Method

Step 1
Put the onion (1) , chickpeas (1 tin) , roasted peppers (75 g) , sundried tomato paste (5 g) and parsley (1 handful) into a food processor and season well. Pulse until coarsely chopped and well combined.
Step 2
Transfer to a bowl and mix with the mince (400 g) . Wet your hands and gently squeeze and shape the mixture into 8 burgers, each about 8cm in diameter. Put on a tray or plate and chill for 10 minutes to firm up.
Step 3
Place a large frying pan over a medium-low heat. Brush both sides of each burger with oil and fry for about 4-6 minutes per side until cooked through – don’t move the burgers until they’re ready to turn. If cooking all 8, you will need to do this in batches.
Step 4
Serve the burgers in toasted buns (8) with salad (to taste) and M&S special burger sauce (as needed) or any sauces of your choice.
