Method

HIDE IMAGES
Step 1
Sieve the flour (75 g) and baking powder (4 g) into the mashed potato (250 g) . Whisk in the eggs (2) , milk (125 mL) and chives (as needed) until smooth.
Step 2
Heat a little sunflower oil (5 mL) and some of the butter (1 knob) in a non-stick frying pan over a medium heat. When hot, add 1 tbsp batter for each pancake and cook 4 at a time for 1 minute, until the bottom is golden brown and bubbles appear on the top. Flip then cook until golden. Keep warm while you cook the remaining pancakes.
Step 3
Serve with the crème fraîche (30 g) , Collection festive chutney (40 g) , smoked salmon (1 pack) and lemon wedges (1) .
