olive oil
for cooking
500 g
turkey
any christmas dinner leftovers
30 g
'nduja paste
(optional)
100 g
M&S Cornish Cove mature cheddar cheese
or Stilton or Brie

Method

HIDE IMAGES
Step 1
Whisk the eggs (8) in a large bowl and season with salt and pepper.
Step 2
Heat a splash of olive oil (as needed) in a large, non-stick, ovenproof frying pan over a medium heat.
Step 3
Add turkey (500 g) and any other leftovers then season and fry for a few minutes until starting to brown.
Step 4
Mix in 1 tbsp ’nduja paste (15 g) to coat the leftovers, and cook for a minute.
Step 5
Pour in the eggs and stir lightly.
Step 6
Scatter in cheese (100 g) and add the remaining ’nduja paste (15 g) in dollops for some pockets of spice.
Step 7
Pop in a preheated oven (200ºC/180ºC fan/gas mark 6) and bake for 15-20 minutes, until just set.
