lemon , juiced

plus extra for sprinkling

bicarbonate of soda

M&S pure honey
40 g
butter , melted

For the whipped honey butter

100 g
unsalted butter , softened
20 g
M&S pure honey
to taste
sea salt flakes

Method

Step 1
Preheat the oven to 200°C fan/220°C/gas mark 6 and line a 2lb loaf tin with butter and flour.
Step 2
Squeeze the lemon juice (1) into the milk (200 mL) and set aside to sour a little.
Step 3
Mix the flour (360 g) , oats (50 g) , salt (3 g) and bicarbonate of soda (5 g) in a bowl and make a well in the centre. Combine the beer (200 mL) , honey (20 g) and melted butter (40 g) in a jug.
Step 4
Pour the wet mixture into the dry and stir lightly – the mixture will be wet and easy to pour. Pour the mixture into your prepared loaf tin and scatter over a few extra oats.
Step 5
Bake for about 35 minutes or until the loaf sounds hollow when you tap it. Cool on a wire rack.
Step 6
Beat the butter (100 g) and honey (20 g) together until pale and fluffy then stir in the sea salt (to taste) . Serve the honey butter with the sliced cooled soda bread.
