Monday

Beef pot roast with mash recipe

Scarlet Reid – M&S Recipes Team

This is definitely one for a work-from-home day – or for making in advance and thanking yourself later. It’s a classic pot roast, full of affordable slow-cooked ingredients, which takes a single pack of diced beef a very long way. Onions, carrots, potatoes and parsnips do much of the heavy lifting, all slowly simmered in stock for maximum flavour and an aroma that fills your kitchen. Serve with buttery mash for a triumphant start to the week.

Tuesday

Vegan sweet potato curry

Heather Taylor – M&S Recipes Team

Less of a dinner, more of a secret weapon, this curry has a rich, complex base of caramelised onions, garlic, ginger, chilli, curry powder, coconut milk and peanut butter. We’ve added butter beans, sweet potato and spinach to this one but you could swap in chickpeas and whatever vegetables are lurking in your fridge. It’s a creamy, satisfying curry that’s packed with goodness, and one you’ll want to come back to.

Wednesday

French onion parcels recipe

Scarlet Reid – M&S Recipes Team

It’s hard to beat a warming bowl of French onion soup on a cold night. But what if you took those flavours and folded them into a little filo pie, gruyère and all? The undisputed star of these parcels is the Remarksable Value red onion, cooked until it’s the best possible version of itself. These golden parcels are served alongside lots more affordable vegetables in a crunchy, seasonal red cabbage and apple slaw. You might have slaw left for your sandwiches the next day too.

Thursday

Cheese and onion toad-in-the-hole recipe

Flo Bischoff – M&S Recipes Team

Are you already having an a-ha moment? Indeed, why haven’t we upgraded our toad-in-the-hole with mature cheddar before now? This is a dependable classic, upgraded for your Thursday night – golden sausages, sweet roasted onions, melted cheddar and fluffy Yorkshire pudding. This one is destined to become a midweek favourite.

Friday

Marry me butter bean pasta recipe

Olivia Ferguson – M&S Recipes Team

There’s almost no protein that the ‘marry me’ trend hasn’t reached – chicken, salmon, steak, tofu, prawn. But now it’s the turn of the butterbean. In case you’ve missed it, this viral meal is exactly what it sounds like: a pasta sauce so creamy and good it sparks marriage proposals. In this version, the velvety sauce is made with blended butterbeans and sundried tomatoes, garlic and chilli, which means it’s also entirely vegan. It’s a Friday night dinner to luxuriate in.
