step 1
Add a glug of oil to a large pan, then add the onion (3) and cook over a low heat for 40-45 minutes, stirring occasionally, until sticky, soft and golden.
step 2
Preheat oven to 200°C/180°C fan/gas mark 6. You will need a 12 hole muffin tray for the parcels.
step 3
Dissolve the stock pot (1) in the boiling water (300 ml).
step 4
Add the dried dried thyme (1 tsp) and plain flour (1 tbsp) to the onions and stir until evenly coated. Pour in the stock, bring to a simmer and cook for 10 minutes, until the liquid has reduced and the mixture has thickened. It should be thick rather than liquidy. Remove from the heat, stir through half the chutney (3 tbsp) and set aside to cool for 5 minutes.
step 5
While the onion mixture is cooling, lay the filo pastry (1 pack) on top of each other and cut through the stack to make 8 equal squares. Separate the layers. For each parcel, layer the individual filo squares on top of each other one at a time, placing each at a slightly different angle to create overlapping points around the edges.
step 6
Spoon the onion filling into the centre of each stack and sprinkle over the Gruyère (80 g). Bring the pastry up and around the filling, gently scrunching the edges together while leaving the centre slightly open. Transfer each parcel to the muffin tray to help it hold its shape.
step 7
Brush the pastry with the egg (1) and sprinkle with the everything seasoning (1 tbsp), if using. Bake for 15 minutes, until crisp and golden.
step 8
Meanwhile, toss the cabbage (1/2) with the apple (1) and carrot (1). Drizzle over the vinegar (1 tbsp) and the remaining chutney and mix well to coat. Serve the parcels with the slaw on the side.
