Author's notes

Take the time to brown the beef well before adding the vegetables and stock – this helps build a richer, deeper flavour in the finished gravy.

Method

step 1
Preheat the oven to 160°C/140°C fan/gas mark 2.
step 2
Put the M&S Remarksable Value British diced beef (1 pack) in a large bowl, season with salt and pepper, then toss with the M&S Remarksable Value plain white flour (2 tbsp) until evenly coated. Heat a glug of oil in a large, lidded casserole dish over a medium-high heat. Add the beef and cook for 12-15 minutes, until well browned all over.
step 3
Meanwhile dissolve the beef stock pots (2) in the boiling water (850 ml).
step 4
Add the onions (2), carrots (3), parsnips (2) and 3 potatoes (3) in to the casserole dish, then add the beef stock (it should mostly cover the food – add extra water if needed).
step 5
Add the dried mixed herbs (2 tsp), chutney (2 tbsp) and red wine flavour pot (1). Mix well.
step 6
Bring to a simmer, then cover with a lid and transfer to the oven. Cook for between 2 hours 30 minutes and 2 hours 45 minutes, depending on how thick you want the sauce to be.
step 7
Around 20 minutes before the end of cooking, put the potatoes (1.5 kg) for the mash in a large pan of salted water. Bring to the boil and cook for 15-18 minutes, or until tender. Drain and mash with the butter (15 g)
step 8
Once the beef is tender and the sauce has thickened to your liking, serve with the mashed potatoes.
step 8 Once the beef is tender and the sauce has thickened to your liking, serve with the mashed potatoes.
