Vegan sweet potato curry

Recipe
This creamy vegan curry is packed full of veggies but still tastes comforting and rich thanks to the peanut butter and coconut milk. We've used butter beans for extra fibre, but chickpeas would work just as well. In fact, this is a brilliant base curry recipe to use up any vegetables you have lurking in the fridge. Any leftovers will freeze well, and taste even better packed up for lunch the next day.

Author's notes

Adding a pinch of salt to the onions helps them soften more quickly, so don’t be tempted to skip this bit.

Method

step 1
Heat a splash of oil in a large casserole dish over a medium heat and add the onion (1) with a pinch of salt. Cook for 4-5 minutes, until softened, then stir in the garlic (4), ginger (2 cm), chilli (1) and pepper (1) and cook for a further 2 minutes. Add the curry powder (1 tbsp) and cook for 1 minute, then stir in the coconut milk (1 tin) and peanut butter (3 tbsp).
step 2
Fill the empty coconut milk tin 2/3 of the way with water and add to the pan, along with 1 tsp salt. Add the butter beans (1 jar) and sweet potato (500 g). Simmer for 20-25 minutes, until the sauce has thickened slightly and the potatoes are tender.
step 3
Meanwhile, add the rice (350 g) and water (525 ml) to a lidded saucepan along with a pinch of salt. Bring to the boil, then turn the heat down to low, cover with a lid and cook for 10 minutes, or until the water has been absorbed. Turn off the heat and leave the rice with the lid on to steam for a further 7-10 minutes, until fluffy.
step 4
Stir the spinach (200 g) into the curry for the last 5-10 minutes of cooking time.
step 5
When the rice and curry are ready, squeeze in the lime juice (1) and taste to check the seasoning, adding more salt and pepper if needed. Serve with the rice.
