plus 1/2 tsp for garnish

lemon , zested

sea salt

M&S Distilled silver tequila
25 mL
lemon juice
as needed

Method

Step 1
Pour 100ml water into a saucepan and bring to the boil. Turn off the heat and drop in the M&S camomile infusion teabag (1) . Leave to infuse for 5 minutes, then discard the teabag.
Step 2
Add white sugar (100 g) and return to a low heat, stirring until the sugar has dissolved. Leave to cool.
Step 3
On a plate, mix together the lemon (2 g) , ½ tsp sugar and the sea salt (3 g) . Dip the rim of a cocktail glass in water, then into the zest mixture to decorate.
Step 4
Pour 20ml of the camomile syrup, the M&S Distilled silver tequila (60 mL) and the lemon juice (25 mL) into a cocktail shaker. Add a handful of ice, then shake until cold.
Step 5
Strain into the prepared glass. Garnish with a few of the edible flowers (as needed) if using, and serve.
