Preheat the oven to 200°C/180°C fan/gas mark 6. Tip the potatoes (800 g) onto a large baking tray (about 25cm x 35cm). Toss with 1 tbsp olive oil and a generous pinch of salt. Roast for 30 minutes, until golden and starting to crisp.

Meanwhile, mix the lemon zest (1) into the softened butter (30 g) and season with black pepper.

In a small bowl, stir together the dill (10 g), mint (10 g), yogurt (200 g) and lemon juice. Season to taste and chill until ready to serve.

After 30 minutes, remove the tray from the oven. Add the salmon fillets (4) to the potatoes and dollop the lemon butter over the fish. Nestle the Tenderstem broccoli (300 g) into the tray.

Return to the oven and bake for a further 15-17 minutes, until the salmon is cooked through and the broccoli is just tender.

Serve the salmon, potatoes and Tenderstem with a generous spoonful of the herby yogurt.
