step 1
To make the harissa sweet potato and chickpea jars, preheat the oven to 200°C/180°C fan/gas mark 6. Arrange the sweet potato (100 g) on a baking tray and drizzle with olive oil. Season with salt and pepper. Roast for 25 minutes, then remove from the oven and stir through the harissa (2 tsp) and chickpeas (75 g). Return to the oven for a further 5 minutes. Allow to cool slightly.

Heat the rice (125 g) in the microwave for 2 minutes, according to the pack instructions.

To assemble the jars, layer up with the roasted sweet potato and chickpeas, the spinach (1 handful), the rice, courgette (1/4), dressing (2 tbsp), cherry tomatoes (4) and cucumber (1/4).

To make the fajita chicken jars, cook the rice (125 g) in the microwave for 2 minutes, according to the pack instructions.

Mash the avocado (1/2) with the lime juice (1/2), then stir through the coriander (5 g). Season with salt and pepper. Assemble the jars by layering the chicken (100 g), rice, smashed avocado, grated carrot (1/4) and courgette (1/4), chargrilled peppers (2) and the red pepper mezze dip (2 tbsp).

Assemble the jars by layering the chicken (100 g), rice, smashed avocado, grated carrot (1/4) and courgette (1/4), chargrilled peppers (2) and the red pepper mezze dip (2 tbsp).
