Add a splash of oil to a large casserole over a medium heat and add the leeks (250 g) and a pinch of salt. Cook for 5-7 minutes, until softened.

Add the stock pot (1) and 800ml boiling water, stirring until dissolved. Bring to a gentle simmer.

Add the asparagus (200 g), frozen broad bean medley (400 g) and ravioli (600 g) and cook for 3-4 minutes, until everything is tender. Add a splash of water if needed to reach your desired consistency.

Grate over the zest of the lemon (1) and serve straight away.
