With the help of a handful of store cupboard staples, they can be made into a week of family dinners. You’ll use the same ingredients in multiple recipes, cutting down on food waste and cost. How to use up the leftovers

Your shopping list will leave you with eggs, peas, carrots, red chilli, Nasi Goreng Paste, Fajita Seasoning, pitta breads, and cherry tomatoes leftover. Here are some ideas to use them up.

  • Make a quick pea omelette with the remaining eggs (use the one whole egg and the leftover beaten egg from the pastry) for lunch (add any grated cheese you have to hand).

  • Toss any remaining veggies, such as carrots, in the remaining nasi goreng paste and roast until tender. Add to lunchboxes or rice bowls.

  • Toast the leftover pittas with a pinch of fajita seasoning in the air fryer until crisp – enjoy as a crunchy snack with houmous.

  • Blitz frozen peas into a creamy dip – add a tin of chickpeas or a spoonful of cream cheese, plus any fresh herbs you have to hand, to bulk it out, if you like.

  • Roast the leftover cherry tomatoes in a little oil until soft and squishy. Toss through cooked spaghetti.

  • Add the remaining red chilli to a bowl with a ½ tsp salt, ½ tsp sugar and 2 tbsp white wine vinegar. Keep in a jar in the fridge, ready to spoon over salads or rice bowls.

  • Spread leftover puff pastry with a little oil and fajita seasoning (add a little grated cheese, if you have it), then roll into swirls and bake for a crunchy savoury snack.
