Preheat the oven to 220°C/200°C fan/gas mark 6.

Break the cauliflower (1) down into florets and set the leaves aside, discarding very tough ones. Roughly chop the sweet potatoes (300 g) (leave the skins on) and de-seed and roughly chop the pepper (1). Add everything to a large roasting tray, season with salt and pepper and drizzle with olive oil.

Roast for 20 minutes, then remove from the oven and stir in the cherry tomatoes (150 g) and fajita seasoning (2 tbsp). Scatter the pitta pieces (3) on top and drizzle with oil. Nestle in the cauliflower leaves. Return to the oven for a further 10-15 minutes until the pitta chips are crisp and the potatoes have broken down, then serve.
