Peel the carrots (250 g) with a speed peeler, then peel into ribbons before thinly slicing into matchsticks. Thinly slice the spring onions (1/2 bunch), reserving one to garnish.

Heat a large wok or deep frying pan over a medium-high heat with a splash of oil and add the carrots and spring onions, then stir-fry for 3-4 minutes. Stir in the nasi goreng paste (1/2 jar) and sizzle for 1 minute, then stir in the rice (2 pouches) and stir-fry for 3-4 minutes to heat through.

Meanwhile, heat a splash of oil in a medium non-stick frying pan over a high heat. Crack in the eggs (4) (they might sizzle a little) and cook for 3 minutes or until cooked to your liking. Scatter the fresh chilli (1) and sesame seeds (1 tbsp) on top of the eggs as they cook and season the yolk with salt.
