Author's notes

There’s no need to peel the sweet potatoes. Give them a good scrub and leave the skins on for added fibre and less food waste.

Method

step 1
Fill a large saucepan with lightly seasoned boiling water. Cook the sweet potato (800 g) for 10 minutes, or until tender, then drain.
step 2
Meanwhile, heat a large ovenproof casserole dish over a medium-high heat. Add a little oil, then add the lamb mince (1 pack) and cook for 5-7 minutes, tipping off any excess fat as needed, until golden brown. Stir through the soffritto (200 g) and cook for another 3 minutes.
step 3
Tip in the cooking paste (1/2 pack) and boiling water (500 ml) and simmer for 10 minutes, until thickened and reduced. Mix the cornflour (1 tbsp) with 1 tbsp of cold water, then stir into the dish. Add the peas (250 g) for the final minute of cooking.
step 4
Preheat the oven to 200°C/180°C fan/gas mark 6. Mash the potato with a little olive oil and season to taste with salt and pepper. Add a glug of milk if you prefer it slightly looser. Spoon the sweet potato mash on top of the lamb mince and smooth with the back of a spoon or spatula. Bake for 20 minutes, until golden brown on top.
