Author's notes

Don’t mash the lentil mixture completely smooth – leaving some of the lentils whole gives the burgers a more satisfying texture and helps them hold their shape.

Method

step 1
Preheat the oven to 220°C/200°C fan/gas mark 7. Spread the potato wedges (6) over one or two baking trays lined with greaseproof paper. Drizzle with olive oil, scatter over the rosemary (10 g) and season with salt. Add the garlic (2) to the tray and roast for 30-35 minutes, turning halfway through, until golden and crisp.
step 2
Meanwhile, make the burgers. Heat a glug of oil in a large frying pan over a medium heat. Add the leeks (2) and cook for 5-7 minutes, until softened. Season with salt and pepper.
step 3
Add the breadcrumbs (30 g), parsley (25 g), mixed herbs (2 tsp) and lentils (1 jar) to the leek mixture. Season well, then roughly mash everything together with a fork or potato masher until combined. Divide into four burgers and place on a lined baking tray. Brush lightly with oil.
step 4
Bake for 20 minutes until firm and lightly golden.
step 5
Spread the bases of the baps (4) with the chutney (3 tbsp). Top each with lettuce (1 head), a burger and a generous spoonful of pickled cabbage (3 tbsp), then sandwich together. Squeeze the garlic cloves out of their skins and mash with a fork. Toss through the rosemary potato wedges and serve with the burgers.
