Author's notes

Don’t skip the 5-minute resting time once you’ve mixed the meatballs. It gives the breadcrumbs time to soak up some of the moisture from the courgette, making the mixture easier to shape.

Method

step 1
Add the M&S British Oakham turkey thigh mince (1 pack), M&S Remarksable Value courgette (1), M&S panko breadcrumbs (80 g), half the M&S Italian style herb seasoning (1/2 tbsp), the M&S Remarksable Value free-range mixed size egg (1) and salt (1/2 tsp) to a large bowl. Mix until fully combined, leaving for 5 minutes so that the breadcrumbs can soak up any extra moisture, then shape into 16 meatballs.
step 2
Heat a large, deep non-stick frying pan over a medium-high heat. Add a drizzle of oil and cook the meatballs for 8-10 minutes, turning occasionally, until golden all over. Remove and set aside.
step 3
Add another drizzle of oil to the pan, then cook the M&S prepared frozen soffritto mix (100 g) for 5 minutes, until softened. Stir in the M&S sundried tomato paste (4 tbsp), remaining M&S Italian style herb seasoning (1/2 tbsp), M&S Remarksable Value chopped Italian tomatoes (1 tin) and M&S cannellini beans in water (2 jars) along with their liquid. Season to taste with salt and pepper.
step 4
Return the meatballs to the pan and simmer for 10 minutes, until the sauce has thickened and the meatballs are cooked through.
step 5
Heat the grill to high. Scatter over the M&S Italian lighter mozzarella (125 g), then sprinkle over the remaining M&S panko breadcrumbs (20 g). Grill for 4-6 minutes, until the cheese has melted and the topping is golden and crisp. Serve straight from the pan.
