Heat a large saucepan over a medium heat and add a glug of olive oil. Add the onion (1) and fennel (1 head) with a pinch of salt and cook for 5-7 minutes, until softened. Stir in the tomatoes (250 g) and cook for a further 5 minutes until beginning to break down.

Add the risotto rice (320 g) and cook for 2 minutes, stirring constantly, until lightly toasted.

Dissolve the stock pot (1) in the boiling water (1 L).

Reduce the heat to low. Add a ladleful of stock to the rice and cook, stirring regularly, until absorbed. Continue adding stock a ladleful at a time, letting each addition absorb before adding the next. Cook for 20-25 minutes, until the rice is tender with a slight bite.

In the final 5 minutes of cooking, stir through the prawns (1 pack) and cook until pink and opaque.

Remove from the heat and stir through the pesto (3/4 jar), crème fraîche (80 g) and lemon juice (1).

Loosen with a splash of water if needed, then season to taste.

Divide between four bowls and finish with the lemon zest, a scattering of parsley (1 handful) and a crack of black pepper.
