plus extra to serve

Preheat oven to 200°C/180°C fan/gas mark 6. Pierce each jacket potato (4) several times with a fork and lightly coat them in oil. Place on a baking tray and cook for 1-1.5 hours, until golden on the outside and soft on the inside.

Meanwhile, place the fish pie mix (1 pack) in a large frying pan with milk (300 ml). Bring to the boil and reduce to a simmer and cook for 4 minutes and then drain off any liquid.

Stir in the lemon and dill sauce (2 packs), frozen peas (100 g), spinach (70 g) and cook for 2-3 minutes until the spinach has wilted, the peas are tender and the sauce is piping hot. Stir through the parsley (1 handful) and season with black pepper.

Split the jacket potatoes open and fluff the centres with a fork. Spoon the fish pie filling generously over each potato and scatter over the grated cheddar (75 g).

Turn your grill the medium-high. Pop the loaded potatoes onto a foil-lined tray and pop under the grill for 3-5 minutes, until the cheese is melted, bubbling and golden.

Finish with the extra parsley and serve with lemon wedges (1).
