Preheat the oven to 200°C/180°C fan/gas mark 6. Arrange the cauliflower (1) in a deep 30 x 35cm roasting tray. Drizzle with olive oil and season with salt and pepper, then roast for 15-20 minutes until charred.

Meanwhile, add the butter (50 g) to a large saucepan over a medium heat and add the leeks (2) with a pinch of salt. Cook for 10-12 minutes, stirring occasionally, until soft (add a splash of water if the leeks start to catch).

Stir in the flour (50 g) and cook for 1-2 minutes. Slowly add the milk (650 ml), stirring as you go, until you have a smooth sauce. Stir in 75g of the cheddar (75 g) and the mustard powder (1 tsp) and heat through for 1 minute. Stir in the drained cannellini beans (1 jar) and butter beans (1 jar).

Pour the sauce over the roasted cauliflower. Top with the remaining cheddar (25 g) and the top that seasoning (2 tbsp). Bake for 20 minutes, until golden and bubbling.
