Preheat the oven to 200°C/180°C fan/gas mark 6.

Place the salmon fillets (2) in the air fryer and drizzle with a little oil. Press the everything seasoning (2 tbsp) into the fillets. Air fry at 180°C for 10 minutes. Remove, discard the skin and flake into chunks. Alternatively, bake in the oven at 200°C/180°C fan/gas mark 6 for 15 minutes or until cooked through.

Heat a splash of oil in a large ovenproof frying pan (24cm) then add the spring onions (1 bunch) with a pinch of salt. Sauté for 2 minutes until softened.

Whisk the eggs (6), most of the dill (5 g) and the chives (5 g) (reserve a little each for the salad) and the cream cheese (2 tbsp) in a jug then season with salt and pepper. A few blobs of cream cheese are OK, just break up any bigger bits.

Pour the egg mix to the pan. Top with the flaked salmon and another teaspoonful of everything seasoning, gently stirring to coat.

Transfer to the oven and bake for 5-10 minutes, until set.

Meanwhile, shave the cucumber (1) into ribbons and combine with the pickled cucumbers (4 tbsp) in a small bowl. Stir through the reserved dill and chives.

Serve the frittata with the cucumber salad.
