Preheat the oven to 200°C/180°C fan/gas mark 6. Lay the chicken legs (1 pack) skin side down on a chopping board and find the joint connecting the thigh and the drumstick. Cut through the joint with a sharp knife to separate them.

Heat a large casserole dish over a medium-high heat and add a splash of olive oil. Season the chicken, then brown for 6-8 minutes, turning occasionally, until golden all over. Remove to a plate.

Add the peppers (2) to the dish and cook for 4-5 minutes, until beginning to soften. Stir in the everything paste (2 tbsp) and cook for 1 minute.

Add the chopped tomatoes (1 tin), olives (50 g), Italian herbs (1 tsp), flavour pot (1) and 100ml water (100 ml). Stir well, then return the chicken to the dish.

Bring to a simmer and then transfer to the oven to cook for 25-30 minutes, or until the chicken is cooked through and tender.

Meanwhile, make the polenta. Bring 1.2 litres of water (1.2 L) to the boil in a saucepan and season lightly. Gradually whisk in the polenta (250 g), then cover with a lid. Reduce the heat to a gentle simmer and cook for 10 minutes, stirring regularly, until thick and creamy.

Remove the polenta from the heat and stir through the butter (30 g) and cheddar (40 g) until melted. Season to taste. Divide the creamy polenta between bowls and spoon over the chicken stew to serve.
