step 1
Preheat the oven to 170°C/150°C fan/gas mark 3.
step 2
Heat a large casserole dish over a medium-high heat and add a splash of oil. Toss the beef (1 pack) with the flour (2 tbsp), then add to the pan and cook for 8-10 minutes until browned. Remove from the dish and set aside.
step 3
Add another splash of oil to the dish, then add the mushrooms (1 pack), carrots (2) and onion (1). Cook for 5 minutes, until beginning to soften. Stir in the tomato purée (2 tbsp), red wine flavour pot (1) and festive chutney (2 tbsp), then add the bouquet garni (1) and water (500 ml). Bring to the boil, return the beef to the dish and cover with a lid. Transfer to the oven and cook for 1.5-2 hours, or until the beef is tender.
step 4
Remove from the oven, season to taste and leave to cool. The filling can be frozen at this stage. Defrost thoroughly before continuing.
step 5
When ready to bake, preheat the oven to 200°C/180°C fan/gas mark 6. Spoon the filling into a 25cm x 18cm x 5cm deep baking dish and top with the puff pastry (1 sheet). Brush with the beaten egg (1) and bake for 20-25 minutes, until the pastry is crisp, puffed up and golden. Serve with green beans on the side, if you like.
