To make the brown butter, put the butter (150 g) in a small saucepan over a medium heat. Melt and cook for 4-5 minutes, swirling occasionally, until golden brown and smelling nutty.

Add the sugar (175 g) and golden syrup (4 tbsp), reduce the heat and stir until the sugar has dissolved. Set aside to cool completely.

Mix the flour (350 g), bicarbonate of soda (1 tsp), ginger (2 tsp), cinnamon (1 tsp) and mixed spice (1/2 tsp) together in a large bowl. Pour in the cooled butter mixture, add the egg (1) and mix to form a smooth dough.

Place the dough between two sheets of greaseproof paper and roll out slightly. Chill for 1 hour, or until firm. The dough can be frozen in an airtight container for up to 1 month.

When ready to bake, preheat the oven to 180°C/160°C fan/gas mark 4. Roll the dough out between the sheets of greaseproof paper until approximately 5mm thick.

Using your favourite cutters, stamp out gingerbread people, stars or festive shapes. Transfer to lined baking trays, leaving around 2cm between each biscuit (you may need a couple of trays).

Bake for 7-9 minutes, until lightly golden around the edges. Leave to cool on the tray for a few minutes before transferring to a wire rack to cool completely.

To freeze, place the cooled biscuits in an airtight container or freezer bag and freeze for up to 1 month. Defrost thoroughly before decorating.

For the icing, mix the icing sugar (100 g) and lemon juice (4 tsp) together to make a smooth, pipeable icing. Spoon into a piping bag, or a food bag with the corner snipped off, and decorate as you like. Add a few drops of food colouring (as needed) to the icing if you like to create colourful buttons for the gingerbread people.
