Heat a small frying pan over a medium heat and add the seeds (20 g). Cook for 1-2 minutes, occasionally shaking the pan, until fragrant. Stir in the ras el hanout (1/2 tsp) with 2 tsp olive oil and cook for a further 1 minute. Season with salt, then set aside in a small bowl.

Add the kale (75 g) to a large bowl with a pinch of salt and a drizzle of olive oil. Scrunch with your hands to tenderise.

Combine the extra virgin olive oil (3 tbsp), lemon juice (1), vinegar (2 tbsp), Dijon (1 tsp) and shallot (1/2) in a small bowl. Season to taste with salt and pepper. Add 2/3 of the dressing to the bowl with the kale, then stir in the parsley (5 g) and mint (5 g) (save a few herbs to garnish). Stir in the beetroot (180 g) and lentils (1 jar). Set aside for 10 minutes.

Top the lentil salad with the figs (4) and spoon over the remaining dressing, then scatter over the seeds. Finish with some extra fresh herbs.
