Heat 1 tbsp olive oil in a large saucepan over a medium-low heat. Add the onions (2) and cook for 5 minutes, until softened.

Add the red cabbage (1), apples (2), ginger (1 tsp), mixed spice (1 tsp) and cinnamon stick (1). Stir well to combine.

Add the brown sugar (100 g), red wine vinegar (150 ml) and cider (50 ml). Cover and cook gently for 20-25 minutes, stirring occasionally, until the cabbage is tender and the apples have broken down.

Stir through the cranberries (50 g) and cook uncovered for a further 5-10 minutes, until the liquid has reduced and the cabbage is glossy and sticky.

Remove the cinnamon stick. Garnish with thyme leaves (1 sprig) and orange zest (1/2), then serve.
