Preheat the oven to 200°C/180°C fan/gas mark 6. Butter (as needed) a 25 x 35cm deep roasting tray.

Peel the potatoes (1.5 kg) and cut very thinly (use a mandoline or a sharp knife) into rounds. Add to a pan of salted cold water, bring to the boil, then reduce the heat and simmer for 7-10 minutes, until the potatoes are almost soft but not quite cooked through. Drain.

Meanwhile, remove the tough stems from the cavolo nero (200 g) and roughly chop. Heat a splash of olive oil in a large sauté pan and add the garlic paste (1 tsp). Cook for 30 seconds, then add the cavolo nero with a pinch of salt and 1 tbsp water. Wilt for 2-3 minutes over a medium heat. Press the leaves down with a spoon to drain any excess liquid from the pan.

Layer the potatoes and cavolo nero into the buttered tray, seasoning with salt and pepper and grating with a little nutmeg (1/2 tsp) as you go. Pour over the tubs of cheese sauces (2 tubs), carefully stirring to coat.

Mix the breadcrumbs (30 g), parmesan (20 g) and lemon zest (1) and scatter over the potatoes. Cover with foil, then bake for 30 minutes, before removing the foil and baking for a further 10-15 minutes until golden and bubbling.

Meanwhile, combine the juice of half of the lemon, the olive oil (2 tbsp) and the mustard (1 tsp) in a clean jam jar and shake to combine. Season to taste with salt and pepper. Trim the end from the chicory (2), remove the outer leaves, and slice the inner piece into quarters lengthwise.

Serve the potato bake with the salad.
