Heat a large, deep non-stick frying pan over a medium-high heat with a glug of oil. Add the onion (1), garlic (2 cloves) and peppers (3) with a pinch of salt and cook for 5-7 minutes, stirring occasionally, until softened.

Stir in the chipotle paste (1 tbsp) (skip or halve the quantity if you prefer it on the less spicy side) and fajita seasoning (2 tbsp), then add the rice (250 g), chopped tomatoes (1 tin), stock pot (1), water (400 ml) and the drained black beans (1 jar). Mix well, bring to a simmer and cook for 18 minutes, stirring occasionally, until the rice is cooked through and tender.

Season to taste, then remove from the heat. Scatter over the grated cheddar (100 g), cover and leave to stand for 5 minutes to melt.

Spoon onto plates and serve with the Tex Mex dip selection (as needed) alongside.
