Add the smoked haddock fillets (2) to a medium (20cm) ovenproof non-stick frying pan with 100ml water. Bring to the boil, then cover with a lid, reduce the heat to medium and steam for 2-3 minutes until opaque. Set aside in a bowl and flake apart.

Preheat the grill to medium. Combine the eggs (4), milk (50 ml) and most of the gruyere (50 g) in a bowl and mix in most of the chives (5 g), then gently fold through the haddock. Season with salt and pepper, being mindful the haddock is quite salty.

Wipe the pan clean with kitchen paper, then add the butter (25 g) over a medium heat.

Pour the eggs into the pan, then scatter over the remaining cheese. Cook for 3 minutes, then pop under the grill for a further 3-4 minutes until the eggs are cooked through and the top is bubbling.

Combine the remaining chives with the lemon zest and juice (1) and the lettuce (1 head), drizzling with a little olive oil and tossing to coat.

Serve the frittata with the salad on the side.
