step 1
Put the breadcrumbs (50 g) and milk (1 tbsp) in a bowl and scrunch together to soften. Add the tuna (2 tins), half of the chopped basil (12.5 g) and the egg (1), then mix until it holds together. Shape into 12 meatballs.
step 2
Heat a large non-stick frying pan over a medium-high heat with a glug of oil. Add the meatballs and cook for around 2 minutes on each side, until golden. Transfer to a plate and set aside.
step 3
Add another glug of oil to the pan, then add the peppers (2). Cook for 2-3 minutes until starting to soften, then stir in the tomato and herb paste (100 g) and cook for 1 minute.
step 4
Add one jar of cannellini beans (2 jars) with their liquid, then drain and add the second jar. Stir in the stock pot (1) and bring to a gentle simmer. Cook for 5 minutes.
step 5
Return the meatballs to the pan, nestling them into the sauce, and simmer for a further 5 minutes, until heated through.
step 6
Serve the stew in bowls with the remaining basil (12.5 g) scattered on top.
