Preheat the oven to 200°C/180°C fan/gas mark 6. Put the potatoes (750 g) on a greaseproof‑lined tray, drizzle with 2 tbsp olive oil and sprinkle with the chopped thyme (2 sprigs) and rosemary (1 sprig). Season, toss well and roast for 25 minutes, until golden and crisp.

Add the porcini mushrooms (25 g) to a jug and top up with the boiling water (150 ml).

Season the pork loin steaks (4) on both sides. Heat 1 tbsp olive oil in a large frying pan over a medium‑high heat. Stand the steaks on their fat edges and cook for 2-3 minutes until the fat is golden and crisp.

Lay the steaks flat and cook for 2-3 minutes on each side, until browned. Add the butter (30 g), spoon it over the steaks, then transfer them to a tray and keep warm in the oven.

Add 1 tbsp olive oil to the same pan and cook the shallots (2) until softened. Add the garlic (2 cloves), chestnut mushrooms (200 g) and thyme (4 sprigs), stir and cook for 2-3 minutes.

Drain the porcini, reserving the soaking liquid, then roughly chop. Add to the pan along with the mixed exotic mushrooms (100 g) and cook for 3-4 minutes, until starting to brown.

Pour in the brandy (50 ml) and cook for 2 minutes, until evaporated. Add the porcini liquid and chicken stock (150 ml) and reduce by half. Stir in the chestnuts (150 g) and double cream (150 ml) and simmer for 5 minutes. Season to taste, then add any resting juices from the pork.

Slice the pork steaks thickly and divide between plates. Spoon over the chestnut and mushroom sauce and serve with the crispy potatoes.
